I've been evolving this recipe for pumpkin bread for many years.

It's incredibly resiliant, in fact it doesn't even matter what order you add the ingridients.

Paige's Organic Omega-3 Pumpkin Bread

     4 1/2 c  whole wheat flour (organic if possible)	
     3 1/4 c  sugar (organic if possible)	
         2 c  ground flax seed meal (organic if possible)	
         3 T  baking soda
     1 1/2 t  salt
     
         2 T  powdered baking chocolate (I use Scharffen Berger)
         1 T  cinnamon
         1 T  nutmeg
         2 t  cloves
         2 t  cardamom
    
       3.5 c  pumpkin (2 cans) (organic if possible)		 
         6    large eggs (organic omega-3 fortified if possible) 		
         1 c  oil (flaxseed oil if possible)
         1 c  water
 
Mix dry ingredients, add remianing and beat.
Pour into three greased loaf pans.

Bake @ 350 for one hour, or untill knife comes out clean.

Makes three large loaves of 12 slices each.
